The key distinction is mono versus poly mode. Poly retriggers the LFO on every note you play, creating varied, semi-random rhythmic hits across a chord. Mono keeps the LFO unified across notes for a tighter, more consistent rhythmic pulse.
Curve shaping lets you push the same LFO from soft and rounded to sharp and stuttered, giving very different textures from one modulation source.
